From Maple Syrup to Ornithology: Explore Alfred's Unique Classes

Sweet! Alfred University offered a course on this pancake topper. Avid Jeopardy fans will recognize this clue as the one that highlighted Alfred University’s class, Maple Syrup: The Real Thing. In this class, students learn the basics of maple syrup and how it's produced. Of course, the class’s highlight is its hands-on nature. Students participate in activities, field trips, and first-hand experiences—and, of course, indulge in the foods maple syrup is known for.

Maple syrup is just one example of the unexpected subjects students can find. Alfred University offers a variety of distinctive courses that encourage students to explore new interests and learn in unexpected ways.

Whether it's an honors seminar like Star Wars: Myth, Magic, and Mania, which analyzes the cultural influence of the Star Wars franchise, or a First-Year Experience class like Life in the Universe, where students study the conditions needed to form life and where those conditions can be found, Alfred offers a variety of interesting courses. Unique classes like these give students the opportunity to apply theory from lectures in a fun and novel way while sharpening real skills.

Learning Beyond Four Walls

Many of those learning experiences take students beyond the traditional classroom, where some of Alfred’s most memorable classes don’t have four walls. In Professor Frederic Beaudry’s Ornithology class, students do more than attend lectures, take notes, and watch PowerPoints; they have the opportunity to study local birds up close.

“There’s really nothing like holding a bird in your hand to create that spark to learn more,” said Beaudry.

In this class, the classroom is Alfred University’s Foster Lake, 25 acres of scenic wilderness just five minutes from campus. Foster Lake is an ideal spot for recreational activities like canoeing or fishing, but for Ornithology students it’s where they learn to safely capture, identify, study, and tag local birds.

“When you see your professor out in the field, you really get a sense of their passion,” said Cody Orzeszek, a senior taking Beaudry’s class.

From Foster Lake to the Bahamas

Fieldwork is an integral part of Alfred’s Environmental Studies program. Students from different areas of study, like geology, herpetology, and ornithology, can gain hands-on field experience.

With state forests dotting Western New York and Foster Lake in its backyard, Alfred is the perfect place to study local wildlife in the field, but that's not where it ends. Alfred’s environmental studies program offers Ecology of the Bahamas, where students spend 10 days doing hands-on research on San Salvador Island.

Whether they're exploring an unexpected subject or taking their studies into the field, Alfred students have opportunities to learn in ways they might never have imagined. Hands-on learning is just one of the many things that make Alfred University unique.

These exciting opportunities help students explore their interests and build the skills they need for their careers.
